Noa Chef’s Hall in Tallinn: A Special Experience

We first heard of Noa Chef’s Hall when we started to explore Baltic fine dining cuisine on our weekend trip to Riga the previous year. We learnt that Noa is included in The Diners Club Best 50 Series as voted for by The Diners Club World’s 50 Best Restaurants. The Baltics are now part of the Michelin Star scheme and in May 2022, Noa Chef’s Hall was awarded a Michelin Star, which it has retained since then. We never start off a post with such high praise but prepare to be blown away and elevated to an immersive and unforgettable fine dining experience accompanied by a knock-out wine list!

NOA Chef’s Hall is one of five restaurants, ranging from casual to fine dining and part of The Siigur Restaurants in Tallinn. Noa and Noa Chef’s Hall are in the same location overlooking the Bay of Tallinn however, we chose to dine at the exquisite Noa Chef’s hall, which features an elevated fine dining set menu each night. Noa serves modern food and adjoins Noa Chefs Hall but is a little less formal. It has been awarded with a Michelin Bib Gourmand so if you prefer something a little less fine dining, we’d recommend you go to Noa with the same great service and location.

Noa Chef’s Hall: The Restaurant

Constructed from wood and with floor to ceiling glass windows, this modern, very ‘grand designs’ dining space has an uninterrupted sea view of Tallinn Bay and a perfect sunset to watch whilst dining. In fact each table has a view of the sea due to the split level design meaning no need to miss out on that egg yolk like sunset! The restaurant opened in 2014 and has been a complete hit ever since, with the people of Tallinn as well as visitors to the city.

How to Get to Noa Chef’s Hall

The easiest and quickest way to get to the restaurant is by Taxi. We’d suggest a round trip as it does take around 15-20 minutes depending on traffic each way and you may finish dinner late and so want a convenient way to get back to your accommodation. The distance from the Old Town of Tallinn to Noa Restaurant is around 11 km and should cost around €17-20 one way. We stayed at the Schlössle Hotel in this luxury hotel right in the heart of the old town and the journey to the restaurant took us 15 minutes as there was close to no traffic, due to a public holiday.

We entered through the doors opposite the bar which goes straight into Noa, after which we were promptly guided to a table through to the Chefs Hall dining area of the property. A long room with panoramic views of the bay with the kitchen at the top. We were asked if we’d like to be seated at the two seats at the Chefs table, being in a prime location we could watch the chefs cook, plate up and look on in awe as they delicately replicated their master pieces in a true showman style. This was most definitely an evening to remember with frontrow seats to the show!

As we took our seats we were introduced to the whole team starting with Scott, head of service; Sander, head Sommelier; Roman, Sous Chef; Felipe, who was working on the grill and finally Orm Oja, head chef and executive chef, Tõnis Siigur.

Noa Chefs Hall, serves up a set menu each night but with advance notice, at time of booking preferably, they will accommodate vegetarians. Essentially Noa aims to substitute the animal protein ingredients with vegetarian alternatives. They use the upmost creativity with foraged ingredients as well as whatever is available seasonally. Unfortunately Noa Chef Hall do not accommodate Vegan diets at the moment.

Culinary creations are innovative, theatrical show stoppers, with a big focus on local ingredients which are turned into mind blowingly prepared dishes.

The Vegetarian Tasting Menu

Here’s everything you need to see and know about our bespoke vegetarian taster menu at Noa Chef’s Hall in Tallinn. Do note the menu’s change seasonally and even daily based on the availability of ingredients.

We started our meal with cocktails to include an Espresso Martini and a Pisco Sour.

Upon the sommelier’s recommendation we also opted to have the accompanying five wine pairings that went with our vegetarian tasting menu and were poured right in front of us at the counter, The Sommelier explained the wines to us as well as their origins of the grapes and vineyard families.

Amuse Bouche

Pre-Course

2016 Vintage Fermented Celeriac Lemonade with Verbena. The celeriac is fermented with apple cider balsamic vinegar for three years.

Bread Course

A selection of house breads baked with condiments. The most deliciously flavoured breads including different butters with one of our favourites being the vegetarian version.

Course 1

Charred leeks and truffle. This had to one of our most favourite courses, encompassing grilled leeks stuffed with truffle oil, buttermilk, black truffle, spinach with a slight dusting of breadcrumbs.

Course 2

Estonian cheese from the grill. We then went on to tuck into a delicious south Estonian cheese covering a dark bread dust by Felipe on the grill

Course 3

Kombucha pickled pears with apple and juniper (palette cleanser). A refreshing palette cleanser, whereby a pretty blackcurrant leaf, reduced pear juice, apple, juniper berry lemon and Japanese tea are presented in an ice sculpted bowl.

Course 4

Cherry tomatoes with goats cheese. Slow roasted cherry tomatoes, with foraged micro-herbs in a rich yet light broth with a delicate taste of goats cheese.

Course 6 (Pre-dessert)

Wild cherries with iced beeswax and plumseed. A deliciously light pre-dessert with two types of cherries sitting on a bed of beeswax ice cream.

Course 7

Rhubarb and browned butter. The main dessert is quite the treat, a hazelnut case tartlet filled with tarte rhubarb and a brown butter ice-cream.

Course 8

A variety of artisan sweets. The meal ends beautifully with coffees or tea and some intricately created sweets. The perfect end.

Towards the end of the evening, diners are given a  signed and dated menu to commemorate your dining experience at Noa Chefs Hall and an extra touch when Chef Orm, was waiting at the taxi to see us off.

Quite literally one of the most surprising dining experiences we’ve had to date, Noa is perfect for a grown up, couples or family meal in a serene setting. But it is most definitely the creativity, innovative cuisine that steals the show at this show stopping Estonian fine dining Restaurant. Oh and the sunset views are most incredible so make sure you step outside to see the sun go down with beverage in hand!

If like us you love some theatre, creativity in menu offerings and styles of cooking, Noa Chef’s Hall is most definitely for you! The service, thought behind each dish and the depth of knowledge of the whole hospitality team, not just the chefs, is truly exceptional. We particularly love their passion for introducing diners to unique Estonian ingredients and combining them with classic as well as modern cooking techniques. The vegetarian tasting menu was given the attention it deserves and great care is taken to ensure that it matches, where possible, the meat protein counterparts. We would thoroughly recommend Noa Chef’s Hall for anyone who fancies a special and memorable meal in Tallinn.

Is a reservation required for Noa Chef’s Hall?

Yes, a reservation here is essential to guarantee a table. Since being awarded a Michelin Star, the restaurant has become very popular and to avoid disappointment, make a reservation via their website.

When should we tell the restaurant that we’re vegetarian?

We’d recommend doing this at the time of reservation in the notes section. A member of the hospitality team will get back to you to confirm. Additionally a few days before your reservation date, you’ll receive a confirmation of attendance and it’s best to mention it again here so the chef team can be prepared well in advance.

Is the restaurant worth the journey out of the city?

Yes, firstly its in a beautiful location, overlooking Tallinn Bay, the food is incredible and at the end of the night, you’re invited to go and see the sunsetting over the water. It’s very romantic.

Are tips mandatory at Noa Chef’s Hall?

The simple answer is no. Tips are not mandatory as they are in other parts of the world such as the USA. We did pay a 20% tip of our final total bill because we truly enjoyed the food, service and whole experience. Tips are shared out between all the staff here so if like us you want to show your gratitude then we’d recommend 20% is adequate.

Do they speak English at Noa Chef’s Hall?

Yes the majority of the team we spoke to are fluent in English so fear not you won’t be expected to speak in Estonian. It doesnt hurt to learn a few words like hello or thankyou! Tere and tänan teid.
